Though I will say Yosemite is in pretty bad shape. There's an entire scene with no audio/lighting and it's just a character flapping its mouth....

Ehh in my experiences, Rapids needs no assistance helping riders get wet... Of course it highly depends on seat selection and a bit of luck (or unluck if you don't want to smell like dirty water).

Yeah as mentioned airplanes are also mainly operated by hydraulics. If they're good enough for controlling passenger jets I don't see why simple lapbars can't utilize them.

This is correct. The Giant's restraints are hydraulic, which are fairly standard on new coasters nowadays.

Not a chance. They'll probably throw some additional seatbelts on the trains to appease lawyers, get a whole lot stricter about large people riding, and reopen it.

Very good point. Some movie theaters are even getting motion simulator-like seats (http://www.d-box.com/) (though they don't move nearly as much as Adventure Theater's does).

Yeah, with that kind of tall building they could even do a 3D dark ride like The Simpsons where the individual cars raise up into a domed screen. But I don't see them doing that as it'd be way more...
